  • Chef Wins $15,000 Prize For Pizza In National Foodservice Contest Sponsored By Real California Milk

    After twelve chefs spent a competitive day crafting innovative pizzas highlighting California cheeses, the California Milk Advisory Board (CMAB) announced three new pizza champions in the 2022 Real California Pizza Contest – a national search for the best pizza recipes using Real California Cheese.

    The Grand Prize winner, David Jacobson from Concord, Calif., is the Lead Pizzaiolo at Forge Pizza Fire Truck and Fourth Bore Taproom & Grill in the San Francisco Bay Area. He took home the top prize for his pizza recipe, The Gold Rush, representing The REAL Californian category.

    The Gold Rush, which pays homage to the “golden” period of California’s gold rush history, incorporates six California dairy products: Mozzarella, Monterey Jack, Provolone, heavy cream and multiple California specialty cheeses, including a washed-rind triple crème and a nutty aged hard cheese. Topped with fingerling potatoes, pancetta and smoked sea salt, this pizza offers rich, complex flavors that are synonymous with California cheeses.

    Jacobson received $5,000 for winning the category and an additional $10,000 for the grand prize distinction, for a total of $15,000.

    The Plant-Forward category winner was Leah Scurto, the owner of Pizzaleah in Windsor, Calif., for her recipe, Spear-it of Spring, inspired by the veggies and colors of spring, pairing California Scamorza and aged Dry Jack cheeses with roasted asparagus spears, mint leaves, and baby arugula to deliver a fresh flavor profile in every bite.

    The CMAB awarded Scurto $5,000 for her winning pizza. Scurto is now a two-time winner in the contest, as she claimed The REAL Californian category in 2021.

    The Cal-Mex category winner was Marcus Medina, the owner of Hella Pie Pizza Company in Tracy, Calif., for his Cali Craft Chicken Enchilazza pie. Inspired by his family’s homemade enchilada recipe, Medina tastefully blends Mexican crema, Oaxaca and cotija with braised chicken, spicy enchilada sauce, and red cabbage to highlight the depth of flavor in Hispanic-style cheeses from California.

    The CMAB awarded Medina $5,000 for the winning pizza. The nine other finalists received $500 each for reaching the bake-off finals.

    “This year’s contest highlighted several top trends in foodservice. One example is the plant-forward category, where the winning pizza incorporated fresh California produce like asparagus and arugula with herbs and California cheeses,” said Mike Gallagher, Business and Market Development Consultant for the CMAB. “The chefs also impressed the judges with the unique fusion of ingredients, such as a pizza topped with ginger and honey to complement a wonderful California soft cheese. Overall, there was an overarching commitment to the creative use of California dairy throughout each recipe.”

    The 4th Real California Pizza Contest, which was held at The Culinary Institute of America (CIA) at Copia in Napa, Calif., was open to professional chefs and culinary students from throughout the U.S.

    A renowned panel of judges presided over the contest. They consisted of: Tony Gemignani, 13-time World Pizza Champion and owner of 22 culinary concepts including restaurants, cafes and retail shops; Glenn Cybulski, certified pizzaiolo and award-winning executive chef; and Spencer Glenn, the 2021 RCPC Grand Prize Winner and general manager of the Pizza My Heart chain. Judges based their scores on a variety of factors including taste, texture and the inventive use of cheeses made with Real California Milk.

    “When the pizza industry is healthy, the California dairy industry is healthy,” stated John Talbot, CEO of the CMAB during the competition. “As the number one producer of milk and mozzarella, so much of our business goes into pizza, it’s important for California to advance and innovate in the category.”

  • National Pizza Contest Finals for Innovative Recipes Showcasing Real California Cheese

    The California Milk Advisory Board (CMAB) announced the 12 finalists for the 2022 Real California Pizza Contest (RCPC) – the fourth nationwide search for the best foodservice pizza recipes that include the most innovative uses of Real California cow’s milk cheeses. The professional chef finalists will compete in three categories during a public bake-off event in Napa, Calif. June 22, 2022 for awards totaling $30,000.

    Winners will be selected by a panel of expert judges including Tony Gemignani, chef, restauranter, international pizza authority and President of the World Pizza Champions; Glenn Cybulski, certified pizzaiolo and award-winning executive chef; and Spencer Glenn, executive chef at Pizza My Heart and 2021 RCPC Grand Prize Winner. The judges chose the 12 finalists from more than 100 blind-judged entries from throughout the United States, in the Cal-Mex, REAL Californian, and Plant-Forward recipe categories.

    “After four years, we continue to be inspired by the innovative use of our California cheeses in pizza contest entries. For such an established foodservice category, chefs haven’t run out of ideas and that’s what brings us back year after year,” said Mike Gallagher, Business and Market Development Consultant for the CMAB. “As the leading producer of mozzarella cheese and second largest cheese producer in the U.S., pizza remains an important category for our foodservice business. Connecting with and celebrating these chefs and their creations helps us build awareness for the tremendous products we have available.”

    The live bake-off finals event takes place at the Culinary Institute of America Copia facility in Napa, where pizzas will be prepared and baked onsite for a blind evaluation by judges. Category winners will each receive $5,000. The Grand Prize Winner, selected from the three category winners, will win an additional $10,000. Remaining finalists will receive $500 each.

  • California Dairy Innovation Center Offers Opportunities For Cheese Education

    The California Dairy Innovation Center (CDIC) announced the latest list of short courses which will be offered this year in collaboration with the Pacific Coast Coalition and industry instructors. Dates for an inaugural Dairy Products, Processing, and Packaging Innovation Conference were also announced.

    The Frozen Desserts Innovation short course will be held on June 28th and 29th at the Dairy Innovation Institute, Cal Poly San Luis Obispo with a focus on capturing consumer trends: sugar-free, lactose-free and high protein. The short course features both lectures, demonstrations and actual ice cream manufacture in the Cal Poly pilot plant and creamery.  In addition, a sales and marketing educational segment will provide practical guidance to entrepreneurs, and established brands alike.     The Advanced Unit Operations short course will take place September 27-29. Designed for those working in dairy plants, this course delivers both theoretical and practical understanding and knowledge of pasteurization, separation, condensation, filtration systems, drying, as well as principles of food safety.   • Two Student Ambassadors To Share California Dairy Messages With International Audience

    Lauren Dutra of Hanford and Siena Rollin of Riverdale have been selected to represent the California Milk Advisory Board (CMAB) in Mexico during the 2022 CMAB International Internship Program.

    The interns, selected from students coming from a California dairy background enrolled in agriculture-related programs at colleges and universities, were chosen based on academic achievement, their connection to the California dairy industry and a willingness to travel abroad and learn more about international dairy sales and marketing. The goal of the International Internship Program is to provide young agriculture and dairy college students an opportunity to learn about dairy foods and marketing in the international marketplace, with a focus on developing leaders who will serve on dairy industry boards, work in dairy foods processing, or in sales or marketing.

    Over the six week period, the interns will spend time with in-country CMAB marketing organization, Imalinx, to gain a better understanding of these markets, consumer buying habits, and promotional efforts on behalf of California’s dairy industry. “California currently accounts for around 33 percent of all U.S. dairy exports so international trade is essential for our continued growth. Over the last decade, the CMAB has worked closely with partners in Mexico to develop markets for California dairy products. This program is focused on providing insight into international dairy marketing for future leaders,” said Glenn Millar, Director of International Business Development for the CMAB.

    Dutra, 21, of Hanford, is currently working towards her B.S. in Dairy Science from Cal Poly State University, San Luis Obispo, where she serves as a representative of the Dairy Club, as well as a Committee Member of the Cal Poly Western Bonanza Management Team.

    Dutra was also an active member of 4-H and FFA, and showed dairy cattle in both organizations. She served as District 7 Dairy Princess from 2019 to 2020. Upon completion of the internship program, she will continue to advocate for the dairy industry, and hopes to incorporate this passion into a career.

    Rollin, 20, of Riverdale, is currently working towards her B.S. in Agricultural Communications at Texas Tech University, where she founded and organizes the Dairy Club. She is a member of the Agricultural Communicators of Tomorrow group at Texas Tech, where she also served as an Intern for the Spring 2021 Dairy Challenge. Rollin showed dairy cattle in both 4-H and FFA, and was an active member in both organizations. She earned a spot on the State winning 4-H Dairy Judging Team, which allowed her to compete nationally at the World Dairy Expo. She also served as District 8 Dairy Princess from 2019 to 2020. Upon completion of the internship program, Rollin hopes to advocate and help create policy on behalf of American farmers as Secretary of Agriculture.

  • Real California Milk + Latina Singer-Songwriter CRYS Partner To Launch The First-Ever Cheese Record

    California Freestyle, the first-ever music record made of California cheese launches today, along with a free consumer download of the featured track that celebrates all things California and California dairy. California Freestyle, a collaboration from Real California Milk with Latinasinger-songwriter CRYS, captures the intersection of California music and delicious, sustainable dairy in itsrarest form – a playable record made from a wheel of real cheese from the Golden State. California Freestyle is a core element of Real California Milk’s new advertising creative and is currently available to download and stream on Spotify, Apple Music, iTunes, Pandora, and YouTube Music.

The existing cheese casing was removed as well as a 1” high 7” space to insert a special vinyl gold record that was carefully pressed and embedded into the cheese wheel surface. All edges were sealed with cheese wax and the limited edition California Freestyle cheese record was made playable on a regular turntable.     The California Milk Advisory Board (CMAB) announced the launch of a consumer promotion focused on starting off the New Year with health and wellness in mind. The “Renew, Reset, Restore” campaign communicates the message that high quality, sustainably sourced California dairy products are a delicious and effective way to help achieve lifestyle goals in the new year. The featured promotional menu includes innovative smoothie and smoothie bowl recipes made with Real California milk, yogurt, and cottage cheese.

    The month-long promotion, which runs through January 30, will be supported with a rebate offer on California dairy products through the Checkout 51 platform.   • Four Functional Treats Compete For $250,000 In Real CA Milk Excelerator Competition Finals

    Sweet treats with functional benefits took home the four finalist spots this week in the Real California Milk Excelerator product innovation competition created by the California Milk Advisory Board (CMAB) and VentureFuel. The finalists tap into the nutritional and flavor profiles of milk and dairy ingredients to deliver performance and recovery benefits in products consumers crave.

    Finalists include:

    These four innovators were selected from a field of 12 semi-finalist competitors during a two-day virtual pitch event judged by a group of experts from Hershey’s, Nestle, Mars, PepsiCo Ventures Group, Amberstone Ventures, Branch Venture Group, FoodNavigator.com, Rosa Brothers Milk Company, Health Magazine, SnackRiot, and The Save Mart Companies. Over 2,000 fans also were able to vote virtually through Perksy, which provides market research for the mobile generation.

    Nightfood, ReThink, Sweetkiwi and Wonder Monday move on to the final, live event at 5 p.m. PST on November 18th where they will compete for $150,000 in marketing support to bring their visions to market with a runner up receiving $100,000 towards the same goal.     “We had tremendous diversity in our field of semi-finalists this year but ultimately, the four products moving to the finals reflect America’s sweet tooth and our continuing desire for treats that don’t give up taste in favor of function. And the votes through Persky, which polled 2000 consumers on which of these products they would be most interested in buying, support the judge’s decisions,” said John Talbot, CEO of the CMAB. “These creative products are tackling some of consumers bigger concerns around sugar content and lactose sensitivity without sacrificing the taste and texture that make a dessert something special.”

    The 12 semi-finalists received $10,000 worth of support each, to develop an edible prototype, while receiving a suite of resources including graphic design, lab or kitchen time and elite mentorship from global marketing, packaging, and distribution experts from companies including Branchfood, Brandology, Bristol Farms, the California Dairy Innovation Center, Diageo, Garrand Moehlenkamp, Heywell, Highlight, Ignite2x, Ketchum, LA Distributing Company, Lemos Jerseys, Mondelēz International, Rodeo, Vori, and Whole Brain Consulting. The total value of competition prizing is over $650,000.

    The California Milk Advisory Board (CMAB) recently announced the return of its annual dairy innovation competition with a new name and increased focus on advancing excellence in functional dairy product development. The Real California Milk Excelerator, the 3rd edition of the CMAB dairy product innovation competition with innovation consultancy VentureFuel, will award up to $650,000 in prizes for new dairy products that support performance and recovery benefits.

    The 2021 Real California Milk Excelerator taps into the thriving functional foods market – a market that has grown significantly over the past year and is projected to reach over $275 billion globally by 2025. With consumers prioritizing personal health and wellness in response to the pandemic, the competition will seek out early-stage startups that utilize two of California’s great resources – an abundant supply of sustainably sourced California milk and the state’s entrepreneurial spirit.

    One of the biggest dairy competitions in the world, the competition seeks early-stage, potential for high-growth applicants with a cow’s milk-based product or working prototype that plays a critical role in personal performance (focus, energy, exercise, strength) and/or recovery (rejuvenation, relaxation, gut health, sleep).

    Up to twelve applicants will be selected to join the RCM Excelerator program with each receiving a $10,000 stipend and support to refine and scale their individual business as well as benefit from group resources including the development of sales and marketing tools. They will also be entered into the CMAB/VentureFuel Mentor Program which includes elite counsel from successful founders, investors, leading corporate executives, and experts across design, marketing, sales, manufacturing, distribution, farming and processing industries. The first place Excelerator winner will receive up to $150,000 worth of additional marketing support from CMAB to accelerate their product growth in the marketplace. Second place will receive $100,000 of marketing supports from CMAB. To further advance opportunities for finalists, a private, Buyer/Investor Day event will be hosted for finalists to pitch actual clients to drive business development and secure financing.The value of the competition awards is $650,000.

    For the first time, CMAB and VentureFuel also will be awarding up to three companies entry into the new Real California Milk Incubator Boot Camp, an option for companies that have great ideas but are too early for the competition. Led by executives at CMAB, VentureFuel and the California Dairy Innovation Center, Boot Camp participants also will gain entry into the VentureFuel Mentor program as well as review of products, tweaking of pitch, introductions to food labs, nutritionists, etc. (a value of $50,000).

  • Veronique Lagrange Appointed Director Of California Dairy Innovation Center

    The California Milk Advisory Board (CMAB), the marketing order representing California dairy producers, today announced the addition of Veronique Lagrange as the Director of the California Dairy Innovation Center (CDIC). The CDIC was recently created to further product-oriented innovation and enhance productivity for the California dairy industry. Working closely with the CMAB and the California Dairy Research Foundation (CDRF), Lagrange will act as a liaison for researchers, educators, business development representatives, and processors interested in innovation efforts.

    Most recently Lagrange held the position of Director of Business Development for the American Dairy Products Institute (ADPI), where she also chaired the Center of Excellence; as well as several industry taskforces. She also spearheaded The Strong Inside campaign, and served as a subject matter expert for business strategies, nutrition and scientific matters; in addition to the organizer of technical programs and conferences.

    Lagrange previously held roles at the US Dairy Export Council (USDEC), which included Senior Vice President of Business Development, Strategies and Insights, and Director of International Marketing. Furthermore, she has conducted food technology programs for the California Raisin Advisory Board, Almond Board of California, and National Honey Board.

In addition to these accolades, Lagrange completed the Executive Program on Managing Technical Professionals and Organizations at the Massachusetts Institute of Technology, Sloan School of Management, as well as the Digital Marketing Program at the Yale University School of Management.

  • Four Dairy Snack Startups Compete For $200,000 In Real California Milk Snackcelerator Competition Finals

    Two Savory, Two Sweet Competitors Preparation for Final Showdown to Make it to Market

    Tracy, Calif. – November 12, 2020 – Ice cream infused with vegetables, to-go premium cheese snacks, decadent chocolate mousse and flavored paneer make up the finalists announced today in the Real California Milk Snackcelerator product innovation competition created by the California Milk Advisory Board (CMAB) and VentureFuel. This is the second event of its kind by the California dairy industry designed to inspire ideas integrating the values of fluid milk and dairy ingredients into snacks to meet growing consumer demand and providing resources to help bring them to market.

    Finalists include:

    • Peekaboo Ice Cream: The first and only organic ice cream with the added nutritional benefits of vegetables.
    • Yummy Industries: Cheese Bits: A line of all-natural, fresh and wood-smoked scamorza and chechil cheeses, conveniently shaped and packaged for on-the-go snacking.
    • Petit Pot: An indulgent single-serve chocolate mousse dessert, perfect for family snacking, made with the best organic, local ingredients from the first brand to bring traditional French desserts to American grocery stores.
    • Sāch Foods Flavored Paneer: The world’s first flavored and artisanal paneer in a snackable form. Rooted in Indian cuisine paneer is a time-tested, nutrient-rich food and a high-protein favorite for millions around the world.

    These four innovators were selected from a field of 16 sweet and savory semi-finalist competitors during a two-day virtual pitch event judged by a group of snack experts from Conagra, SnackRiot, Hershey’s, Bristol Farms, General Mills, Unilever, Mondelez, Rosa Brothers, RangeMe, Acreage Holdings, Better Food Ventures and Trail Mix Ventures. A virtual fan vote, through Perksy, which provides market research for the mobile generation, also was factored into the final decision.

    Peekaboo, Yummy Industries, Petit Pot and Sāch Foods will move on to the final, live event November 19th hosted by OS Studios at https://snackcelerator.splashthat.com where they will compete for $200,000 in support to bring their visions to market with a runner up receiving $100,000 towards the same goal. Each founder will be presenting to a field of judges from the CPG, retail, venture capital and food science world representing such companies as Clorox, Mondelez, Whole Foods, CircleUp and more.

    “This field of finalists represent the innovation we’re seeing in better-for-you snacking today – highly flavorful, portable options with added benefits. And consumers agree. Through the Persky platform, 2000 consumers were introduced to these products during the semi-finals and voted on which they would be most interested in buying. Those scores were factored into the final judging and will be included on the 19th,” said John Talbot, CEO of the CMAB. “Any of these four products will make a perfect partner for our real milk and dairy ingredients, which offer incredible functionality plus flavor and a host of naturally occurring nutrients.     The sixteen semi-finalists received $10,000 worth of support each, to develop an edible prototype, while receiving a suite of resources including graphic design, lab or kitchen time and elite mentorship from global marketing, packaging, and distribution experts from companies including Diageo, Nestle, Mondelez, My/Mo Mochi Ice Cream, Bristol Farms, Rosa Brothers, Food Network/Hearst Magazines, Pod Foods, Latitude Ventures, The Marketing Greenhouse, The Creative Pack, Whole Brain Consulting and Power Brands. The total value of competition prizing is over $800,000.
