  • Search Commences for Best Pizza Recipes Featuring California Cheese & Dairy

    The California Milk Advisory Board (CMAB) has launched the seventh annual Real California Pizza Contest, a nationwide search for the best pizza recipes that showcase Real California cheese and dairy products. The contest, open to professional chefs and culinary students across the U.S., will award $30,000 in total prize money for the most innovative uses of cow’s milk cheeses from California.

    The online entry submission period opens March 20, 2025, and closes May 16, 2025. Twelve finalists will be selected for an all-expense-paid trip to compete head-to-head at a bake-off event July 29, 2025, in Napa, Calif.

    This year’s contest spotlights three new pizza recipe categories:

    • On the Menu: An inventive pizza recipe that contains two or more Real California cheese or dairy products that is already included on the entrant’s restaurant or pizzeria menu.
    • The Big Cheese: A creative take on America’s favorite pie – the cheese pizza – that features Real California Mozzarella and at least two other Real California cheeses.
    • Innovative Wildcard: This pizza recipe is a chef’s chance to “wow” the judging team with an original cheese-centric recipe that includes Real California Mozzarella and a healthy helping of kitchen creativity.

    “Our contest is focused on highlighting the best in pizza from around the country that showcases how California cheeses and dairy ingredients can elevate any restaurant or pizzeria menu,” said Mike Gallagher, Business and Market Development Consultant for the CMAB. “The judging team looks forward to seeing submissions in new, fresh categories that celebrate California’s leading foodservice cheese, Mozzarella, as well as other cheese varieties.”

    All online entries will be evaluated, with the top four recipes in each category selected as finalists. The 12 finalists will travel to Napa to compete in the bake-off event at the Culinary Institute of America at Copia.

    Each category winner will receive $5,000. The overall highest-scoring pizza will be named the Grand Prize Winner, earning an additional $5,000. Finalists who do not win a category will each receive $1,000.

    The contest will be judged by an esteemed panel of award-winning pizza chefs, including 13-time world pizza champion Tony Gemignani, renowned Italian and pizza chef Glenn Cybulski, and international champion pizza chef and restaurant owner Laura Meyer.

  • California Dairy Short Course Training Opportunities and Conference For 2025

    The California Dairy Innovation Center (CDIC) has released the schedule for short courses and events as a part of its 2025 training program series for processors, producers, entrepreneurs, and students. The courses, which have no pre-requisites, will be held at a variety of California locations and are open to all participants.

    The schedule of courses includes:

    Products, Process & Packaging Innovation Conference – February 18-20, 2025 – Cliffs Resort & Spa, Shell Beach, Calif.
    In collaboration with Cal Poly San Luis Obispo and the Pacific Coast Coalition, this conference highlights advancements in dairy product innovation. This event will focus on dairy marketplace innovation, recent enhancements made to dairy processing and packaging and improved marketing as presented by today’s leaders and entrepreneurs as they share their insight and experience in today’s dairy industry.

    Buttermaking & Milk Fat Fundamentals – March 12, 2025 – Cal Poly San Luis Obispo, Dairy Products Technology Center, SLO, Calif. This one-day course will combine lectures and hands-on learning focused on buttermaking processes and milk fat technology.     Dairy Products & Processing 201 – April 24, 2025 – Petaluma area, Calif. A one-day introduction to processes used to formulate dairy products, with in-depth review of regulations, packaging and claims. This is a free program open to all California-based processors, academia and supply chain partners.Registration will be posted here.

    Frozen Desserts – May 20-21, 2025 – Cal Poly San Luis Obispo, Dairy Products Technology Center, SLO, Calif.
    A two-day deep dive into frozen dessert formulations, which will include 100% hands-on pilot plant demos and prototyping. The focus will be on innovative products: no sugar added, high protein, cottage cheese ice cream, “boozy” frozen desserts, ethnic flavors and more. Registration will be posted here.

    R&D Best Practices – June 17-19, 2025– Cal Poly San Luis Obispo, Dairy Products Technology Center, SLO, Calif.

    Exploring Cooking & Acid-Set Cheeses – October 7-8, 2025– Cal Poly San Luis Obispo, Dairy Products Technology Center, SLO, Calif. Two days of hands-on cheesemaking workshops, which will focus on acid-set cheeses and their culinary uses. This new program will feature a variety of fresh and other cheeses used in food service and processed foods applications with a global flair, from fromage frais to paneer.   • Opportunity For Student Ambassadors To Share California Dairy Messages With International Audiences

    The California Milk Advisory Board (CMAB) have announced the return of its student internship program where young agriculture ambassadors will represent Real California Milk internationally. Applications are now open for summer representatives in CMAB’s partner countries.

    The interns, selected from students enrolled in agriculture-related programs at colleges and universities throughout the state, will be chosen based on academic achievement, connection to the dairy industry and a willingness to travel abroad and learn more about international dairy sales and marketing, as well as a plan to work in the California dairy industry in the future.

    Over the six-week period, interns will spend time with CMAB marketing organizations overseas in order to gain a better understanding of these markets, consumer buying habits and promotional efforts on behalf of California’s dairy industry.

    “Over the last decade, the CMAB has worked closely with partners in Mexico and Asia to develop markets for California dairy products. This program is focused on providing insight into international marketing for future leaders who will work in the dairy business and one day serve on dairy industry boards and lead industry groups,” said Glenn Millar, Director of International Business Development for the CMAB.

  • Chefs Awarded Top Prizes For Innovative Use Of Real California Cheeses

    Following a live bake-off competition where eight professional chefs from across the United States were judged on their innovative pizzas highlighting California cow’s milk cheeses, the California Milk Advisory Board (CMAB) crowned three new pizza champions in the 2024 Real California Pizza Contest, the premier national search for the best pizza recipes that feature Real California Cheeses.

    Eddie Stalewski took home the $7,500 (protein category) prize for his Rose Bowl pizza.

    In the protein-focused category, Eddie Stalewski, chef of Mercurio’s in Pittsburgh, Pa., grabbed the contest’s $7,500 prize for his Rose Bowl pizza.

    The Rose Bowl pizza kicks off with crunchy, cheesy Frico edges on a thin, tavern-style cornmeal crust. It’s topped with mild Giardiniera vegetables, handmade Calabrian sausage, and pepperoni roses. The cheeses include Real California Fresh Mozzarella, Provolone, White Cheddar and Dry Jack. The pizza is finished with a sprinkle of pickled Juanita peppers and a basil pesto drizzle.

    In the produce-focused category, Michael Vakneen, partner at Truly Pizza in Dana Point, Calif., earned a $7,500 prize for his Umami Mushroom pizza.

    The Umami Mushroom pizza is a deeply flavored creation with Real California Smoked Mozzarella, Stracchino, and TomaRashi cheeses combined with marinated roasted mushrooms – all topped with a creamy onion and garlic sauce. Touches of toasted sesame oil, sesame seeds, chopped green onion and bonito flakes complete the taste profile.

    Michael Vakneen was awarded the $7,500 (produce category) prize for his Umami Mushroom pizza.

    In a special team three-cheese pizza bake off, Vakneen and Jay Falk, chef at Caliente Pizza & Draft House in Pittsburgh, Pa., joined up to win the top prize. The pair shared the contest’s $7,500 prize.

    The five other professional chef competitors each received $750 for reaching the bake-off competition finals.

    “Chefs thrive on innovation and we saw that with our winning chefs and recipes this year. We were pleased to see the variety of Real California cheese and dairy products they tapped into for inspiration,” said Mike Gallagher, Business and Market Development Consultant for the CMAB. “All the recipes at the bake-off gave the finalists an opportunity to show the judges how products made with milk from California dairy families improve the quality and flavor profile of any pizza.”

    The 6th Real California Pizza Contest, held at the Culinary Institute of America at Copia in Napa, Calif., was open to professional chefs and culinary students across the United States. The 2024 contest again produced a record number of entries leading to a competitive finalist selection and exciting live event for participants.

    The competition was judged by a renowned panel of judges including 13-time World Pizza Champion and owner of 22 culinary concepts, Tony Gemignani; certified pizzaiolo and award-winning executive chef Glenn Cybulski; and professional chef and 2023 Real California Pizza Contest Grand Prize Winner Bill Crawford. Judges based scores on a range of factors including taste, texture and the inventive use of cheeses made with Real California Milk.

  • Back To School Season Kicks Off With Retail Campaign Focused On Mornings With California Dairy

    The California Milk Advisory Board (CMAB) has announced a consumer promotion focused on the breakfast occasion this season. Whether families with children headed back to school or those who are looking to simply reset and settle back into a routine after a busy summer, quick and easy recipes made with wholesome Real California Milk dairy products can make mornings mean more for everyone.

    Mornings Mean More communicates messages of re-establishing morning routines while offering delicious and nutritious breakfast solutions for busy mornings. The recipes highlighted in the campaign can all be made in 20 minutes or less, including Magical Cereal Milk Latte with Salted Caramel Whipped Cream, Chocolate Shell Cottage Cheese Overnight Oats, One Pan Skillet Breakfast Sandwich, Black and Blueberry Ricotta Grilled Toast and more.

  • Retail Campaign Encourages Consumers To Enjoy Summer With California Dairy Snacking

    The California Milk Advisory Board (CMAB) announced today the return of a retail campaign focused on summer snacking with Real California dairy products. Snacking has risen in popularity over recent years, which has shifted consumers to snack more than ever and continue to look for affordable options that offer flavor and health benefits. With the addition of California dairy in simple recipes, snacking becomes a delicious summer-long experience that families can feel good about.

    The Summer Snacking promotion elevates awareness of California dairy products through integrated digital media and in-store elements. This will consist of targeted digital ads and social media posts, email communication, shopper marketing with select retailers, in-store signage, and e-commerce promotions through Instacart. An advertising and public relations surround sound campaign will include influencer partnerships with posts on Instagram and TikTok platforms, as well as earned media outreach to spotlight trends in dairy snacks.

    Recipes featured in the Summer Snacking campaign range from craveable flavors to cool treats, all elevated with Real California dairy.   • The California Milk Advisory Board and VentureFuel Double Down on the Future of Milk with Return of Milk Excelerator Competition

    The California Milk Advisory Board (CMAB) has announced the return of the Real California Milk Excelerator competition, in partnership with innovation advisory VentureFuel, for a 6th year with an emphasis on Health & Wellness startups. The competition, which focuses on accelerating value-added products using real milk, features an immersive mentorship program and access to non-dilutive capital and an innovation ecosystem for brand growth. The 2024 program also will feature a new Future of Dairy Expo event during the final pitch to bring together past winners and other industry leaders to showcase how real dairy fits the needs of the modern consumer.

    The 6th RCM Excelerator taps into the thriving Health & Wellness market, which has grown significantly since the pandemic and is projected to reach over $8.47 trillion by 2027, according to Statista. Given real dairy’s natural versatility of benefits and functionality, from nutrition and flavor to texture and chemical composition, this approach encourages innovation across product categories, all leveraging the versatility of the California dairy ecosystem.

    The largest global dairy accelerator, the program is on the hunt for any company building innovative products – made with at least 50 percent real milk or dairy – that leverage the benefits of dairy to promote health, wellness, and general well-being. This includes, but is not limited to, better-for-you formulations, digestive health, cognitive function, functional ingredients, hydration, portion control, self-care, and anything in between. This year’s competition offers a value of up to $500,000 in prize and program value for products that introduce novel applications in any form and drive utilization of Real California dairy.

    Over the past 5 years, the Real California Milk Excelerator has worked with more than 50 startups across categories as diverse as food, beverage, direct-to-consumer platforms, textiles, and personal care.     Each of the eight participants selected for the 2024 cohort will have access to a group stipend and a robust network of resources to refine and scale their product and business.   • Real California Milk Kicks Off 6th Annual Search For Pizza Innovation

    The California Milk Advisory Board (CMAB) has announced the launch of the 2024 Real California Pizza Contest, the sixth annual search for the best pizza recipes using Real California cheese and dairy. The contest, which is open to professional chefs and culinary students throughout the U.S., will award prize money totaling $28,500 for the most innovative uses of cow’s milk cheeses from California. The entry submission period runs from March 18, 2024, through May 17, 2024.

    This year’s contest simplifies submissions into two new categories: Protein and Produce. Protein pizza recipes will highlight meat toppings in combination with Real California Mozzarella and other Real California cheeses. Produce pizza recipes will emphasize the delicious flavors of vegetables and fruits paired with Real California Mozzarella and other Real California cheeses.

    “Each year we bring the best of the best in pizza together to showcase how California cheeses and dairy ingredients – paired with protein, produce or both – are essential tools for pizza flavor and innovation,” said Mike Gallagher, Business and Market Development Consultant for the CMAB. “We look forward to reviewing the submissions that celebrate California’s leading foodservice cheese, Mozzarella, and our many cheese varieties.”

    All entries will be evaluated with the top four recipes in each category selected as finalists. The eight finalists will receive an all-expense paid trip to compete head-to-head at a bake-off event on August 7, 2024, at the Culinary Institute of America at Copia in Napa, Calif.

    During the bake-off event, following the main competition, the eight chefs will compete in a separate Three-Cheese pizza bake-off, where they will be randomly paired and charged with crafting a signature three-cheese pizza selected from the wide array of cheeses made with Real California Milk.

    The winners of the Protein and Produce categories will each receive $7,500, and the pair of winning chefs in the Three-Cheese pizza bake-off will split $7,500. All other finalists will receive $750 each.

    Both competitions will be judged by an esteemed panel of award-winning pizza chefs, including 13-time world pizza champion Tony Gemignani, renowned Italian and pizza chef Glen Cybulski, and 2023 Real California Pizza Contest grand prize winner Bill Crawford of Righteous Slice in Idaho.

  • Real California Milk Debuts Great Mozzarella Showdown Foodservice Recipe Contest

    The California Milk Advisory Board (CMAB) announced the launch of the 2024 Great Mozzarella Showdown, an inaugural foodservice recipe contest challenging professional chefs and culinary students to develop creative, non-pizza dishes using California’s number one cheese product: Mozzarella.

    The CMAB is hosting this online recipe contest to build on the ongoing popularity of Mozzarella at foodservice and how it can be used in endless menu innovation. The goal is to showcase ideas using two styles of this versatile cheese in a variety of dishes for different dayparts, including appetizers and handheld items.

    The Great Mozzarella Showdown is open to professional chefs and culinary students in the U.S. and offers participants the opportunity to submit creative recipes in two categories: California Mozzarella and California Fresh Mozzarella.

    Influential foodservice judges will select eight winning recipes from the online submissions based on criteria including innovation, use of cheese as a primary ingredient, and flavor expectations. Professional chefs will conduct a cook off of the eight winning recipes and grand prize champions will be named for each category. Each chef finalist will receive $2,000, with the two winning dishes receiving an additional $2,000 for a total of $4,000 to each category champion. In total, the CMAB will award $20,000 in prize money.

    The California Milk Advisory Board (CMAB) announced the return of its consumer promotion focused on holiday breakfast traditions made special with California dairy. The annual campaign – titled Holiday Mornings Mean More – debuted in 2020 and focuses on the California market.

    Holiday Mornings Mean More communicates messages of family, togetherness, and the importance of celebrating time together over the special breakfast recipes we spend a little extra time on during the season. The featured promotional menu provides a turn-key solution for busy shoppers, where any of the recipes can be scaled up or down to accommodate gathering sizes. The menu includes recipes designed to be enjoyed together such as a Greek Veggie and Feta Frittata, Ricotta Churro Waffles, California Breakfast Sopes and Chocolate Chip Sheet Pan Pancakes.

    The promotion, which runs November 8 through December 31, will be geotargeted around 1,162 California stores including Ralphs, Safeway, Raley’s, Mollie Stone’s, and Cardenas, among others. It will be supported with in-store media and shopper marketing activations.
